Ingredients
- 1 (8 to 10 ounces) goat cheese log, at room temperature
- 1/4 cup oil packed sundried tomatoes, patted dry and finely chopped
- Zest of 1 lemon
- 1/2 teaspoon black pepper
- 1/2 cup finely chopped PLANTERS® dry roasted peanuts
- 3 tablespoons finely chopped parsley
- 3 tablespoons minced chives
Directions
- In medium bowl, place goat cheese. Stir in sundried tomatoes, lemon zest and pepper. Form goat cheese into a log.
- In shallow dish, stir together peanuts and herbs. Roll goat cheese log in peanut and herb mixture to coat. Wrap in plastic wrap. Refrigerate 1 hour. Serve with crackers.
