Ingredients
Salad:
- 5 ounces mixed greens
- 1 cup halved red grapes
- 1/4 cup shaved Parmesan cheese
- 1/4 cup thinly sliced red onion
- Balsamic dressing
- 1 cup Savory Parmesan Peppercorn Granola; recipe follows
Savory Parmesan Peppercorn Granola:
- 1/4 cup oil
- 1 tablespoon maple syrup
- 1 egg white, beaten
- 1 1/2 cups old fashioned rolled oats
- 1 ( 5-ounce) package PLANTERS® Nut Duos Peppercorn Pistachios & Parmesan Flavored Cashews, roughly chopped
- 1/2 cup pepitas
- 2 tablespoons pine nuts
- 1 teaspoon Italian seasoning
- Pinch red pepper flakes
Directions
Salad:
- In bowl, toss greens, grapes, cheese and onions with balsamic dressing. Top with Savory Parmesan Peppercorn Granola.
Savory Parmesan Peppercorn Granola:
- Heat oven to 350°F. Line baking sheet with parchment paper.
- In small bowl, whisk oil, maple syrup, and egg white.
- In separate bowl, combine oats, nuts, seeds and seasonings.
- Poor oil mixture over mixture. Stir to coat well. Spread onto baking sheet.
- Bake 25 to 30 minutes, stirring halfway, until fragrant and golden in color. Cool on pan, then break up and store in an airtight container.
